Over the past few years, a new wave of Irish food producers has emerged onto the scene, largely in thanks to initiatives such as the SuperValu Academy and Grow with Aldi. Recently, on a visit to Cork, we came across Goodness Me – tasty & hearty pastries filled with delicious, healthy fillings.
I bought a couple of boxes of each flavour; Mature Cheddar Cheese & Onion and Ratatouille & Quinoa. Each box contained two of the hand-crafted pastries with a 20 minute cooking time from frozen. They freeze each pastry straight away to utilise natures pause button and lock in all of the natural goodness with no need for any artificial additives or preservatives. With the pastry frozen unbaked, they popped out of the oven as fresh as if I had baked them from scratch by myself.
A quick Google search brought up the story of how the owners, from the tip of the Beara Peninsula in Allihies, West Cork, were inspired by Cornish miners who had found an ingenious way of bringing their dinners to work by wrapping them in a pastry casing, an edible lunch box so to speak. Intrigued by this concept, they went about creating their own savoury pastries with a modern twist.
Although seemingly not readily available in Galway yet, keep an eye on SuperValu stores in your local area and upcoming promotions in Lidl.
